Chicken Enchiladas

My menu plan called for Chicken Enchiladas for supper last night so I made some of our family favorite enchiladas.

Here are the ingredients you'll need:



Chicken Enchiladas

Ingredients:

3 chicken breasts, cooked and shredded
1 can cream of mushroom soup
1 can cream of chicken soup
1 can chopped green chiles
small bundle of green onions, sliced
1 soup can of milk
cream cheese
2 cups of Monterey Jack cheese, grated, or a shredded Mexican cheese blend
10 small flour tortillas

Instructions:

In a boiler, combine the 2 soups, green chiles, chopped green onions, and 1 soup can of milk.  Heat mixture until hot through. You can add milk if you think the mixture needs more milk for the right consistency.

Start putting the enchiladas together in this order:

Spread approximately 1 Tbsp of cream cheese down the center of a flour tortilla.



Then layer some of the shredded chicken on top of the cream cheese and sprinkle some of the Mexican cheese on top.



Ladle a spoonful of the soup mixture across the enchilada.



Fold the flour tortilla over and place in a greased 9x13 dish.



You can cram the enchiladas together in the dish or you can put 5 in one dish and 5 in another dish . . . which is what I did.



Pour the remaining sauce over the enchiladas being sure to cover all the flour tortilla.  Sprinkle with grated cheese.  Bake at 350° for 25 to 30 minutes until cheese is melted and enchiladas are bubbling.

Wish I had made some Mexican rice to go with it instead of plain white rice, but it was still delicious.

Hope you give it a try.  Honestly, Dave and I love it, but the Ferrell boys aren't as happy with it because of the noticeable green chiles, green onions, and mushrooms in the sauce.  Next time, I'll puree those up so no one will be able to see them.

So that was supper last night at our house.  Tonight we are having BBQ Meatballs.  The boys are slowly drifting out of their rooms to the kitchen as the smell of the cooking meatballs travels throughout the house.  They smell divine!  The recipe for the Meatballs can be found on my blog HERE.

The buzzer is sounding . . . I got to go and dish out supper for 

                           the Ferrell boys and me!
