Tasty Tuesday - Oven-Baked Chicken Fajitas


I love chicken fajitas.  I love them at the restaurant.  I love them made on the stovetop and in the crockpot.

My newest recipe for chicken fajitas calls for them to be baked in the oven.  I was skeptical.  How could that be good?

It is!  Just ask sweet Shane :)


It's the way I've been making our chicken fajitas since Christmas.  And we have chicken fajitas every other week in this house.  I do love them. :)

I got the original recipe for Baked Chicken Fajitas from Six Sisters' Stuff.  They have some great recipes on their site, and it's one of my favorite places to find new recipes to try.  Their recipe for Baked Chicken Fajitas was great.  I would probably fix them that way most every time if I didn't have to feed the Ferrell boys!  Ha!  But the Ferrell boys don't like onions, green peppers, and tomatoes mixed in with their chicken fajitas . . . so I've had to adapt the original recipe for my family.  Here's my recipe (adapted from Six Sisters' Stuff) for Baked Chicken Fajitas.  I hope you give it a try!

Baked Chicken Fajitas

Start off by preheating your oven to 400 degrees.  You need the following ingredients:

1.5 pounds of chicken tenderloins  (from Tems, of course)
Fajita Seasoning Mix
2 Tbsp oil


I'm very picky about my chicken or rather . . . Dave is picky about his chicken.  :)  There can be no fat on the chicken.  None.  So I carefully trim each piece before cooking it.  Can you see that little thin piece of fat on the chicken tenderloin below. . . .



I carefully cut the fat off each piece.  (Because I love Dave sooooo much.)  :)




















It's almost like a piece of skin.  Yuck!







After trimming the chicken, I cut the tenderloin into small pieces/slices.


Mix the fajita seasoning and 2 Tbsp of oil together in a small bowl.


Spread the chopped chicken in a 9x13 dish that's been sprayed with nonstick cooking spray.  Salt and pepper the chicken.


Drizzle the seasoning mixture over the chicken pieces and toss to coat the pieces with the mixture.


I decided at this point to slice an onion to lay across the chicken.  The Ferrell boys can pick that off when they serve themselves.  :)


Bake uncovered in the preheated oven for 20 minutes.  Stir and cook for an additional 20 minutes.  If you are married to Dave . . . you stir and cook them for another 20 minutes!  He likes his chicken well done!


I usually cook some sliced onions and bell peppers in butter to go with the chicken.   Serve the chicken in a pretty bowl.  :)



 Along with some flour tortillas, sour cream, salsa, grated cheese, and sauteed onions and bell peppers.  Yum!


I also serve our chicken fajitas with Mexican rice.  You can make it homemade or buy one of the Spanish rice mixes.  It's a great meal.
